PICKLED TOMATOES | |
2 c. lime 4 qt. cold water 7 lbs. green tomatoes 2 qt. white vinegar 4 lbs. sugar 1 box allspice 6 sticks cinnamon Mix 2 cups lime in 4 quarts cold water. Slice 7 pounds of green tomatoes thin and soak in lime water 24 hours. Wash in cold water, soak in water 24 hours. On the third day, make syrup of 2 quarts white vinegar and 4 pounds of sugar, 1 box of allspice and 6 sticks of cinnamon. Bring to a boil and cool. Pour over tomatoes (well drained). Let stand 24 hours. On the fourth day, bring to a boil, simmer for 40 minutes and pack into jars and seal. |
