OVEN FRIED PECAN CHICKEN 
1/2 c. biscuit mix
1/2 c. ground pecans
1 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
6 tbsp. butter
1 (2 1/2 to 3 lbs.) fryer, cut up

Combine biscuit mix, ground pecans, paprika, salt and pepper, mixing well. Set aside. Melt butter in a 13 x 9 x 2 inch baking dish. Dredge chicken pieces in pecan mixture and place in melted butter. Bake uncovered at 350 degree for 30 minutes. Turn chicken over, cover and bake an additional 30 minutes or until done.
