CHICKEN ROTEL 
2 cans cream of chicken soup
2 c. cooked, diced chicken
1 sm. onion, chopped
1 soup size can Rotel (found near canned tomatoes)
16 oz. Velveeta
1 1/2 c. cheddar cheese, shredded
7 oz. bag Doritos

Saute chicken and onion. Pour soup, Rotel and Velveeta cheese, plus 1 cup of cheddar cheese. Warm. In 9"x13" pan, place 1/2 to 3/4 of the crushed Doritos in the bottom of the pan. Pour cheese and chicken mixture on top. Sprinkle the rest of the Doritos and 1/2 cup cheese on top.

Bake in oven at 350 degrees until bubbly, 15 minutes. Let sit before serving.
