HONEY OATMEAL BREAD | |
2 c. boiling water 1/2 c. mild flavored honey 2 tbsp. butter 2 tsp. salt 1 c. oatmeal 1 pkg. dry yeast 1/4 c. lukewarm water 4-5 c. unsifted flour In a large mixing bowl stir together boiling water, honey, salt, and oats. Let stand for 1 hour. In a small bowl dissolve yeast in lukewarm water. Add to oatmeal mixture. Stir in 4 1/2 cups flour. Beat well. Cover and let rise until double, about 1 1/4 hours. If necessary, add more flour and knead until dough does not stick to your hands and is elastic. Shape into two loaves. Place in two greased pans. Let rise until doubled. Bake at 350 degrees for 40-50 minutes. Tops should be well browned and bread should sound hollow when rapped with knuckle. Remove from pans. Cool on racks. |
