PEACH MUFFINS 
1/2 c. butter
3/4 c. sugar
1 egg
1 1/2 c. flour
1 1/2 tsp. baking powder
1 tsp. vanilla
1/2 c. plain yogurt or dairy sour cream
1 c. fresh, frozen or canned peaches, chopped & drained
1 c. chopped pecans

Cream butter; add sugar, beat until light and fluffy. Add egg and beat well. Sift flour, baking powder and set aside. Beat vanilla and yogurt into creamed mixture. Stir in flour, stir in briefly the fruit and pecans. Drop by spoonful into well greased pans. Bake 400 degrees for 20 minutes or until nicely browned. Yield: 12 muffins.

I used non-fat vanilla flavored yogurt and these turned out GREAT. I used my pampered chef chopper for the peaches and that made preparing the canned peaches really easy. This was a fun recipe for my 3 yr. old and I to make. He sifted, and added each item to the mixer, put papers in the muffin tin, licked the spoon from the yogurt and drank the juice from the peaches. I added a teaspoon of cinnamon to the mix and that was really nice. Easy to prepare, easy clean up!
