PEACH MUFFINS | |
1/2 c. butter 3/4 c. sugar 1 egg 1 1/2 c. flour 1 1/2 tsp. baking powder 1 tsp. vanilla 1/2 c. plain yogurt or dairy sour cream 1 c. fresh, frozen or canned peaches, chopped & drained 1 c. chopped pecans Cream butter; add sugar, beat until light and fluffy. Add egg and beat well. Sift flour, baking powder and set aside. Beat vanilla and yogurt into creamed mixture. Stir in flour, stir in briefly the fruit and pecans. Drop by spoonful into well greased pans. Bake 400 degrees for 20 minutes or until nicely browned. Yield: 12 muffins. |
