EASY FRENCH ONION SOUP 
3 tbsp. butter
1 tbsp. oil
4 c. finely sliced onions
2 (10 1/2 oz.) cans beef broth
2 cans water
1 tsp. salt
Freshly ground pepper to taste
3 tbsp. brandy (optional)
4 slices French bread (toasted)
4 tbsp. grated Swiss cheese
4 tbsp. grated Parmesan cheese

Melt butter in heavy pot. Add oil and heat. Add onions and saute for about 15 minutes, stirring often. Add broth, water, salt and pepper. Bring to a boil; reduce heat and simmer for 45 minutes. Add brandy and simmer for 10 more minutes. Transfer soup to 4 individual oven proof bowls. Top each with a slice of French bread, 1 tablespoon of Swiss cheese and 1 tablespoon grated Parmesan cheese. Place under broiler until cheese is golden. Serve immediately.
