1 lb. medium-size shrimp, frozen or peeled and deveined 1/4 c. butter, melted 2 tbsp. green onions, sliced 1 or 2 cloves garlic, minced 1 tbsp. lemon juice Dash of salt 1/2 tsp. grated lemon rind 2 tbsp. minced parsley, (fresh is best) 1/4 tsp. hot sauce Combine butter and next 4 ingredients in a large skillet. Heat until bubbly. Reduce heat to medium, add shrimp and cook, stirring, until shrimp is pink. Add lemon rind, parsley and hot sauce, toss lightly. If desired garnish with a lemon slice and parsley sprig. Serve immediately. 2 servings. |
