FAMILY PANCAKES 
1 egg
1 c. buttermilk (or use 1 tbsp. vinegar to sweet milk)
2 tbsp. salad oil or melted shortening
1 c. flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Beat egg. Add remaining ingredients in order and beat with mixer until smooth. Heat griddle until a droplet of water skitters on the griddle, then heat is just right.

Pour batter onto griddle. Turn pancakes when they are puffed and full of bubbles (before bubbles break). Bake other side until brown.

VARIATION: Add 1/2 cup fresh blueberries to batter just before pouring onto griddle.
