TACO SALAD 
1 lb. lean ground beef
1 head lettuce, finely chopped
Cherry tomatoes, halved
1 bunch scallions, chopped
1/2-3/4 lb. shredded Cheddar cheese
1/2 c. chopped black olives
Chopped red or green pepper (optional)

DRESSING:

1/2 c. mayonnaise
3 tbsp. taco sauce (med.)
3 tbsp. water

Mix dressing ingredients together.

Saute ground beef. Drain thoroughly. Toss together in large salad bowl all vegetables, cheese and ground beef. Toss with dressing. Serve with tortilla chips.
