PERFECT CORN BREAD 
1 c. sifted flour
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow cornmeal
2 eggs
1 c. milk
1/4 c. shortening

Sift together flour, sugar, baking powder and salt. Stir in the cornmeal. Add eggs, milk and shortening. Beat with rotary or electric beater until just smooth, about 1 minute. Do not over beat. Pour batter into greased 9x9x2 inch pan. Bake at 425 degrees for 20 to 25 minutes. Spread with butter and honey 5 minutes before baking is completed.
