PINA COLADA MUFFINS 
1 box yellow cake mix
1 tsp. coconut extract
1 tsp. rum extract
1 c. flaked coconut
1/2 c. chopped walnuts
1 c. crushed pineapple, slightly drained

Prepare cake mix according to directions, add remaining ingredients. Mix one minute. Fill 30 muffin paper cups 3/4 full. Bake at 350 degrees for 15 minutes. Good served with honey butter.
