OLD FASHIONED PECAN CAKE | |
1/2 c. shortening 3/4 c. white sugar 1/2 c. brown sugar 2 eggs 2 tsp. baking powder 1/2 tsp. salt 1 tsp. vanilla extract 1 c. chopped pecans 2 1/8 c. cake flour 3/4 c. milk Cream well shortening, white and brown sugar. Beat in 2 eggs. Sift cake flour, baking powder and salt. Add alternately with milk. Add vanilla. Fold in chopped pecans. Pour batter into 2 (8 inch) pans. Bake in preheated 350 degree oven for 25 to 30 minutes. Top with frosting. FROSTING FOR OLD FASHIONED PECAN CAKE: 1 box powdered sugar 3 tbsp. butter 1 tsp. vanilla Pinch of salt 1 tbsp. caramel syrup 5 tbsp. or more of water 1 c. chopped pecans Beat all ingredients with mixer. Put chopped pecans between layers of cake and on top. |
