Boil hen or fryer the day before (or any left over chicken or turkey) 1 tbsp. butter Medium size onion, chopped 2 cans tomatoes and green chili Fritos Velveeta cheese or American, sliced Boil hen in 1/2 full pot of water; simmer 3 to 4 hour until tender. Saute chopped onion in butter until transparent. Add to approximately 3 to 4 cups salted chicken stock and 2 cans of chili and tomatoes; simmer. (1 chicken bouillon = 1 cup stock) In baking dish lightly greased with butter, put layer of Fritos, cubed chicken, cheese and 1 cup sauce. Repeat in layers. Bake 40 minutes. Can be made ahead; frozen, thawed and then cooked. Good served with cranberry sauce, garlic bread, tossed salad and or green vegetable. |
