BROILED HALIBUT WITH HERBS | |
2 lb. 1 inch thick halibut steaks 1/3 c. butter 2 tbsp. minced onion 1/2 tsp. salt 1 clove garlic, minced 1/4 tsp. pepper 1/4 tsp. thyme 1/8 tsp. dried tarragon 1/4 tsp. dried basil 1/4 tsp. dried parsley 1 tbsp. lemon juice Place halibut in foil lined broiler pan without rack. Blend all herbs and seasonings with onion and butter. Add lemon juice, small amount at a time. Spread 1/2 mixture over halibut. Broil in preheated broiler 3-5 minutes. Turn, spread together 1/2 mixture on halibut and broil 3-5 minutes. Do not over cook. Remove to platter and spoon sauce on top; serve hot. 4-6 servings. |
