WHITE BEAN SOUP 
1 1/2 lbs. white beans
1 c. olive oil
2 onions, chopped fine
2 garlic buds
2 carrots, sliced
3 celery stalks, chopped
1/2 can tomatoes
Pinch of salt and pepper

Soak beans in saucepan of water for 5 hours. Drain and cover with cold water. Bring to a boil and add remainder of ingredients. Continue boiling for approximately 45 minutes or until beans are done. Season to taste. Serves 4-5.
