VEGETABLE BEEF SOUP 
2 c. cooked beef
4 potatoes, peeled and cubed
1 onion, chopped
2 c. mixed vegetables
Tomatoes or tomato juice

Beef may be soup bone, left-over roast, stew meat, or even hamburger. If possible, use the beef stock as a base. If stock is not available, cover meat with water and add a bouillon cube. Add potatoes and onions and cook gently. Add choice of mixed vegetables, either canned, frozen, or left-overs. Add canned tomatoes or tomato juice. Salt and pepper to taste. Simmer gently over low heat until all vegetables are tender.
