SHIT ON A SHINGLE/POORMANS FISH
SANDWICH
 
1 (4 oz.) can of tuna
1/2 stick of butter
1 can peas, drain liquid
1/4 c. flour
2 c. milk
Salt and pepper
Bread

In medium saucepan melt butter. Mix flour with 3 tbsp. of the milk stir until lumps are gone. Add to the melted butter; stirring constantly. Over medium heat gradually add the remainder of the milk. Cook until thickened to a gravy like consistency. Add drained tuna and peas; cook over low heat for 5 minutes. Season to taste. Serve on toast. For variety canned salmon, chicken or ham; or ground hamburger or beef can substitute for the tuna.

If you were ever in the military SOS was chipped beef, sausage or hamburger mixed in milk gravy. We poured the gravy over toast (Shit on a Single) or biscuits. With a couple of fried eggs on top its a great breakfast.

This is a great recipe. I've tried it with all kinds of meat, and the tuna always come back as the favorite. Don't know why some of you are upset. You can substitute any meat you want, as the recipe clearly states. There's more to life than beef.

As stated, SOS can be made with any thing you like. In World War II, it was made with chipped beef. My father used to like it years later. We're in the North East where biscuits and gravy are not as popular as in the South. Have fun with the recipes!
