CHEESE CAKES 
3/4 c. granulated sugar
1/8 tsp. salt
1/4 tsp. nutmeg
4 eggs
1 recipe pie crust dough
1 c. raisins (cut some of larger raisins in half; currants can be used)
1 tsp. orange juice

Prepare muffin tins with pie crust dough. Beat the eggs until fluffy. Add the other ingredients and fill the muffin tins. Makes 8 little cakes.

Bake at 400 degrees for 10 minutes. Lower temperature to 375 degrees and bake 6-8 minutes more. Do not overbake or filling will be dry.
