FRIED RICE 
1 c. dry rice
2 c. water
4 slices bacon, diced
3 eggs
4 green onions (scallions), cut up
Soy sauce to your taste
Optional: Any leftover pork or ham, diced

Day before or early in the day cook the rice and let it cool. In heavy skillet, brown diced bacon and remove bacon from pan, reduce heat. Beat the eggs and pour them in hot bacon drippings. Add the cooked rice and onions. Mix together. Add bacon and any leftover diced meat. Add soy sauce until you get desired color. Stir well and cook on low heat for 15 minutes.
