MEXICAN FRUITCAKE 
1 (20 oz.) can crushed pineapple, undrained
2 c. plain flour
2 tsp. baking soda
2 c. sugar
2 eggs
1 c. chopped walnuts

CREAM CHEESE FROSTING:

2 c. powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick melted butter

1. Preheat oven to 350 degrees.

2. Mix fruitcake ingredients and pour into 13"x9" greased with butter pan and bake 45 minutes (35 minutes for glass dish).

3. Blend until smooth and frost cake while hot. This is delicious and so easy and fast.
