POTATO AND PEA CURRY 
2 tbsp. butter
1 onion, peeled and chopped
2 tsp. each: ground cumin, turmeric (or substitute any curry powder)
2 tsp. ground coriander
1/4 tsp. chili powder
2 bay leaves
1 c. canned tomatoes
1 lb. potatoes, peeled and quartered
1 1/4 c. water
Salt and pepper to taste
3/4 lb. frozen peas

Melt the butter in a large saucepan and saute the onion until soft. Stir in the spices and bay leaves. Add the remaining ingredients. Bring to a boil, then cover and simmer for 10 to 15 minutes. Serve over rice or couscous.
