FRESH APPLE WALNUT CAKE 
4 c. coarsely chopped & peeled apples
1/2 c. walnuts
1 1/2 c. sugar
2 eggs
1/2 c. Crisco
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon

Preheat oven to 350 degrees. Combine apples and sugar and set aside. In large bowl, mix eggs, oil and vanilla. Beat 1 minute. Add dry ingredients; alternate with apple mixture. Stir in walnuts. Grease and flour 13"x9"x2" pan. Bake at 350 degrees for 45 to 50 minutes. Test with toothpick for doneness. When cool, frost with Lemon Glaze.

LEMON GLAZE:

1 c. confectioners' sugar
1/2 tsp. vanilla
1 1/2 tbsp. lemon juice
1 tbsp. corn syrup

Blend until smooth; if thick add a few drops of water.
