RAISIN HERMITS WITH LEMON GLAZE | |
1/2 c. butter, softened 3/4 c. packed brown sugar 1 egg 1/2 c. light molasses 1 1/2 c. flour 1/2 tsp. each cinnamon, nutmeg, cloves 1/2 tsp. baking soda 1/4 tsp. salt 1 1/2 c. raisins 3/4 c. chopped pecans In mixer bowl cream butter and sugar until fluffy. Beat in egg then molasses. Mix to blend well. Sift together flour, spices, baking soda and salt. Stir into creamed mixture. Stir in raisins and nuts. Spread in greased 13x9x2 baking pan. Bake 350 oven 20-25 minutes until center is stiff soft but springs back to the touch. Then brush with Lemon Glaze while warm. Cut into 24 bars. LEMON GLAZE: Combine 2/3 c. sifted powdered sugar 2 tbsp. lemon juice 1 tsp. grated lemon peel Mix to blend well. |
