LEMON SQUARES 
1 c. flour
1/2 c. softened butter
1/4 c. powdered sugar
2 eggs
1 c. sugar
1/4 tsp. baking powder
1/4 tsp. salt
2 tsp. grated lemon peel (optional)
2 tbsp. lemon juice

Heat oven to 350 degrees. Mix flour, butter and powdered sugar. Press in ungreased square pan 8x8x2 or 9x9x2 inches, building up 1/2 inch edges. Bake 20 minutes.

Beat remaining ingredients until light and fluffy (about 3 minute). Pour over hot crust. Bake until no indentation remains when touched lightly in center (about 25 minutes). Cool, cut into squares.

Note: They look better if baked until browned.
