CHICKEN SPINACH BAKE 
1 to 2 lbs. chicken breast, boneless & skinless
1 onion
1 sm. can sliced mushrooms
1 pkg. frozen chopped spinach, thawed & drained (squeezed out very well)
1 to 2 c. cheese (I use Mozzarella)
4 strips cooked bacon or bacon bits (optional)

Trim fat from chicken, cut into 1 inch cubes and saute with a little olive oil, sliced onions, and a little Worcestershire sauce for 3 to 4 minutes. Just until tender - do not over cook! Pour into loaf size baking pan and top with mushrooms, then spinach, then bacon strips, then cheese, then bacon bits. (I use bacon strips or bacon bits - not both). Bake at 350 degrees until bubbly, approximately 20 to 30 minutes. Serve directly from pan.
