THIN WHITE SAUCE 
1 tsp. fat or butter
1 tbsp. flour
1 c. milk
1/2 tsp. salt (optional)
1/2 tsp. pepper (optional)

Melt butter or fat. Blend flour or seasonings until smooth. Add milk gradually, stirring constantly, until starts to boil. Cook 3 minutes. Cook vegetables according to directions; drain and serve with sauce if desired. A thicker sauce may be made by adding more flour and fat.
