CHICKEN SALTIMBOCA | |
3 whole chicken breasts, boned & skinned 1 tsp. salt 6 thin slices pressed ham 1 sm. can stewed tomatoes 6 slices Swiss cheese 1/2 tsp. dry sage 1/3 c. dry bread crumbs 2 tbsp. Parmesan cheese 2 tbsp. minced parsley 4 tbsp. melted butter Flatten chicken pieces, sprinkle with salt. Top with slice of ham, Swiss cheese, 2 teaspoons stewed tomatoes and dash of sage. Roll jelly roll fashion. Combine bread crumbs, Parmesan cheese and parsley in bowl. Dip chicken roll up in melted butter, then in bread crumb mixture. Place in baking dish (rolled edge down). Top with few pats of butter. Bake uncovered at 350 degrees for 45 minutes. |
