OATMEAL CRISPIE COOKIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 eggs, well beaten
1 tsp. vanilla extract
1 1/2 c. plain flour
1 tsp. salt
1 tsp. baking soda
3 c. quick cooking oatmeal
1/2 c. chopped nuts (optional)
6 oz. chocolate bits (optional)

Thoroughly cream shortening and sugar - add eggs, vanilla, nutmeats and chocolate bits. Mix well.

Shape into rolls. Wrap in wax paper and chill thoroughly or overnight. Slice 1/4 inch thick. Bake on ungreased cookie sheet at 350 degrees for 10-12 minutes. Let cool 1 minute and loosen from pan. Then let cool longer before removing from pan.
