HEAVENLY, BUT HEALTHY FLAPJACK | |
This recipe is great for diabetics. It's also great for packed lunch boxes and for breakfast snacks too :) 400g porridge oats (6 cups) 100g muesli or granola (1 1/4 cups) 4 tbsp. honey 160g butter (2 sticks) 80g margarine (1 stick) 120g white or brown sugar (1/2 cup; optional) Mix butter and margarine together in a bowl. Add white or brown sugar (if using) and mix. Pour in the porridge oats. Add honey and mix. Add in the muesli now. Mix all the ingredients until they all blend into a yellowy mixture. Lay the ingredients onto a baking sheet or tray and rub butter onto it to make sure the flapjacks don't stick. Bake the flapjacks in the oven at 220°C (425°F) for 15 minutes, the recipe should then be golden brown in colour. Note: After a few minutes of cooling I suggest cutting the flapjacks into squares as it is easier to cut them evenly when the flapjacks are still moderately hot. Submitted by: Lorna Hewitt (UK) |
