ALEX'S BREAD CRUMB FISH 
Flounder fillets (1/2 lb.)
1 egg, beaten with 1 tbsp. water
1-2 c. bread crumbs (we make this with fresh bread in the food processor

Usually serves 2 kids - if fillets are large cut in half or cut the fillets into fish sticks.

Have the child dip the pieces of fish first in the egg mixture to coat, then into the bread crumbs - gently patting in the crumbs so they stick. Help child saute the fish in a frying pan. We use 1 tablespoon butter and 1 tablespoon oil. Cook about 3 minutes on each side or until nicely browned. Serve with tartar sauce.
