CORNBREAD DRESSING WITH DRIED
FRUIT
 
1 1/2 c. dried mixed fruit bits
1/2 c. butter
1 med. onion, chopped
1 c. chopped celery
5 c. cornbread crumbs
2 c. white bread crumbs
2 c. white bread crumbs
1 1/2 c. chicken broth
1 1/2 tsp. rubbed sage
1 tsp. salt
1/2 tsp. freshly ground pepper
1 egg, lightly beaten

Place fruit in bowl and cover with water. Allow to sit several hours. Preheat oven to 350 degrees. Melt butter in skillet. Add onion and celery; saute until done. Remove form heat and set aside. Drain fruit.

In large bowl combine fruit, sauteed mixture, all bread crumbs and broth. Add seasonings. Stir in egg. Place stuffing in a lightly greased 2 quart dish. Cover with foil. Bake 25-30 minutes or until stuffing is heated through.
