FRESH TOMATO, BASIL AND CHEESE
PIZZA
 
1 Boboli pizza crust or any other prepared crust
2 tsp. olive oil
1/2 c. grated Parmesan cheese
2-3 tomatoes, cut into slices
6 cloves garlic, thinly sliced
1/8 tsp. salt
1/8 tsp. pepper
1/4 c. chopped fresh basil

Brush crust with olive oil. Sprinkle with 1/4 cup cheese, leaving 1/2 inch border. Arrange tomatoes over cheese, overlapping. Top with garlic, remaining cheese, salt and pepper. Bake at 500 degrees for 12 minutes on bottom rack of oven. Remove pizza to cutting board; top with basil, let stand 5 minutes.
