SCOTCH LACE COOKIES | |
3/4 c. butter (1 1/2 sticks) 1/2 c. sugar 1 pkg. regular butterscotch pudding mix 1 tsp. vanilla 2 c. quick cooking rolled oats 1/2 c. pecans, chopped Cream butter and sugar, add pudding mix and vanilla and blend well. Mix in oats and nuts by hand. Batter will be firm. Roll into balls, using a rounded measuring teaspoon of dough for each. Place 3" apart on an ungreased cookie sheet and flatten slightly with a fork. Bake in a 350 degree oven for 12 to 15 minutes. Cool slightly on cookie sheet, then remove with wide spatula to cooling racks. Makes 4 1/2 dozen cookies. |
