BUTTERMILK GRIDDLE CAKES 
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
2 c. buttermilk
1 lg. egg
2 tbsp. melted butter

Sift all dry ingredients together in bowl. Take egg yolk and beat with fork. Add egg to buttermilk. Make hole in center of dry ingredients. Pour in all at once. Stir just a little bit to mix it through. Do not beat, it will be lumpy. Add melted butter and then egg white which has been beaten stiff.
