CRUDITE SALMON | |
6 salmon fillets 3/4 tsp. freshly ground pepper 3 lg. plum tomatoes, chopped 1 zucchini, sliced 3 tbsp. chives 1 tbsp. olive oil Place salmon in large skillet. Sprinkle with pepper. Add 1 cup water to salmon. Cook for 45 seconds, then turn salmon over and cook for 45 seconds. Remove the pan from the heat and let set covered for 2-3 minutes. Place salmon on plates. Add tomatoes, zucchini, and chives to liquid in skillet. Cook over high heat, stirring constantly, until softened, 30-60 seconds. Add olive oil and boil for 1 minute. Spoon over salmon; serve. |
