CHICKEN AND SAUSAGE JAMBALAYA | |
1 lg. fryer 1 l b. smoked sausage, cut in sm. pieces 2 med. onions, chopped 1 c. celery, chopped 1 med. bell pepper, chopped 2 pods garlic, chopped 3 c. rice (UNCLE BEN'S®) 2 (8 oz.) cans tomato sauce 4 c. water Salt and pepper to taste Hot sauce (optional) Cooking oil (enough to fry chicken) Use a 3 gallon iron pot. Fry chicken and sausage until slightly brown. Remove from pot; debone chicken when cool and set aside. Drain off all but 1/2 cup oil. Add onions and celery; cook a few minutes, then add garlic and pepper. Add tomato sauce and water. Put the deboned chicken and sausage into mixture and let come to a boil. Add rice and stir well over a slow fire for about 5 minutes. Cover and put in oven for 1 hour at 275 degrees. |
