IMPOSSIBLE VEGETABLE PIE 
2 c. chopped fresh broccoli or sliced fresh cauliflower
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. shredded Cheddar cheese (about 4 oz.)
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Lightly grease pie plate, 10 x 1 1/2 inches. Cook broccoli until almost tender (about 5 minutes); drain thoroughly.

Mix broccoli, green pepper, onion and cheese in pie plate. Beat remaining ingredients until smooth, 15 second in blender or 1 minute with hand beater. Pour into pie plate; bake until golden brown and knife inserted halfway comes out clean, 35-40 minutes. Let stand 5 minutes before cutting.

1 package (10 ounce) frozen chopped broccoli or cauliflower, thawed and drained, can be substituted for the fresh broccoli or cauliflower. Do not cook.
