PEACH-UPSIDE DOWN CAKE 
1/2 c. shortening
2 eggs, separated
1 tsp. vanilla
2 tsp. baking powder
1 c. sugar
2 c. flour
1/2 tsp. salt
1/2 c. milk
1 or 2 cans of sliced peaches or fresh peaches when in season

Sift flour, then add to shortening and sugar and egg yolks and milk. Mix together. Fold in vanilla and stiffly beaten egg whites. Melt 1 cup of brown sugar and 3 tablespoons of butter together in an iron frying pan. drain peaches and arrange over brown sugar and butter. Add a few cherries for color.
