UNCOOKED CUCUMBER RELISH 
8 lg. cucumbers
4 med. onions
4 green peppers
1 sweet red pepper
1/2 c. salt
2 c. sugar
2 c. vinegar
1 tbsp. each mustard & celery seed

Grind cucumbers, onions, peppers, sprinkle with salt and let stand overnight. Drain and add remaining ingredients. Stir well. Let stand 1 hour. Place in sterilized jar. Makes 5 pints.
