BLACKENED FISH 
Skinned, filleted fish
Melted butter
2 tbsp. salt
2 tbsp. paprika
1 tbsp. garlic powder
1 tbsp. onion powder
2 tsp. red pepper & cayenne
2 tbsp. ground black pepper
2 tsp. ground thyme
2 tsp. oregano
2 tsp. ground coriander
2 tsp. seafood seasoning
2 tsp. Creole seasoning

Mix seasonings together and generously sprinkle onto the fillet, rubbing mixture into the meat. Dip the seasoned fillet into the melted butter. Using a very hot skillet, cook approximately 2 minutes per side.

Can also be cooked on the grill. Blackened seasoning works well with meats also.
