COUNTRY RIBS 
3 to 4 lb. country style pork ribs
1 tbsp. oil
1/2 c. soy sauce
1/3 c. ketchup
1 tsp. dry mustard
2 tbsp. brown sugar (packed)
1 clove garlic (pressed)
1/4 tsp. black pepper
1 tsp. chili powder
A few dashes of hot pepper sauce

Cut off excess fat from ribs. Heat oil. Brown ribs. Place them in a roasting pan. Combine soy sauce, ketchup, mustard, brown sugar, garlic, black pepper, chili powder and the hot pepper sauce. Pour sauce over ribs, turning once to coat evenly. Cover with foil and bake at 325 degrees for 45 to 50 minutes. Uncover. Spoon sauce over ribs. Leave uncovered and bake 45 to 50 minutes longer until ribs are tender, a rich brown and begin to crisp. Serve on a large platter, spooning extra sauce over ribs. Garnish with orange slices and celery leaves if desired. Good served with biscuits spread with celery seed butter, spicy baked red beans, corn - celery salad, and iced tea or beer, if desired.
