FRESH PEACH COBBLER | |
1 qt. fresh, peeled peaches, sliced 3/4 to 1 c. sugar 1 stick butter 1 1/2 c. plain flour, sifted 3/4 tsp. salt 1/2 c. vegetable shortening 5 to 6 tbsp. cold water Combine peaches, sugar and butter in a 1 1/2 quart saucepan. Cook slowly, stirring often until peaches are tender and syrup begins to thicken. Transfer to 1 1/2 quart baking dish and set aside. Sift flour and salt together. Cut shortening into mixture. Sprinkle water evenly over mixture (just enough to dampen flour). Make dough. Roll out on board and cut into 1-1 1/2 inch strips. Cover peaches with some of the strips. Place in a 350 degree oven. Bake until lightly browned. Gently punch pastry strips into the peach mixture. Add the remaining strips. Place back in oven and brown. |
