ORANGE-CAULIFLOWER SALAD 
2 (11 oz.) can mandarin orange segments, drained
1/2 small Cauliflower, separated into flowerets (about 2 cups)
1/2 small green pepper, chopped
2 oz. Spinach torn into bite-size pieces
1/4 c. French dressing
Lettuce cups

Toss oranges, cauliflower, green pepper, spinach and dressing. Serve in lettuce cups. 6 servings 120 calories per serving
