COUSCOUS SALAD 
1 c. couscous
1 1/2 c. chicken stock
1 c. chopped cucumber
6 chopped scallions
1/4 c. raisins
1/4 c. chopped parsley
1 tsp. dried mint (optional)
1/2 tsp. cumin
6 tbsp. extra virgin olive oil
Juice of 1 lemon
Salt and pepper to taste

Prepare couscous according to package directions with the chicken broth. Toss warm couscous with remaining ingredients. May be served at room temperature or chilled.
