SPINACH LASAGNA 
1 bunch spinach, finely chopped (or 1 pkg. frozen, chopped spinach)
1 onion, chopped
2 cloves garlic
1/2 c. water
3 c. tomato sauce
1 tbsp. basil, chopped or 1/2 tsp. dried basil
Freshly ground pepper
2 c. dry cottage cheese
1/2 c. plain yogurt, low fat or non-fat
8 oz. lasagna noodles
6 oz. mozzarella cheese, part skim

Wash, dry and chop fresh spinach or squeeze thawed spinach dry. Saute onions and garlic in water. Add tomato sauce and seasonings. Simmer 20 to 30 minutes. Mix cottage cheese and yogurt. Cook lasagna noodles according to directions on package. Drain well. Spread part of sauce in a shallow 9 inch baking pan. Add layers of noodles, spinach, cottage cheese mixture and mozzarella. Repeat layers ending with mozzarella. Bake in 350 degree oven 40 to 50 minutes. Makes 6 servings.

MICROWAVE: Reheat 10 minutes. Defrost 14 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
