AUSTRIAN APPLE STRUDEL | |
STRUDEL DOUGH: 1 1/2 c. all purpose flour 1 egg 2 tbsp. oil 1 tsp. vinegar (white) Dash salt 1/2 c. lukewarm water Beat egg lightly with a fork. Mix flour, water, salt and vinegar until you have a smooth and silky dough. (Use your hands). Cover with a dish towel and let rest at least 1/2 hour. Flour an old table cloth (or any other piece of material) you need the kitchen table for this. Roll dough as big as you can. Use enough flour on your table cloth so dough can't stick to it. Then you have to pull the dough with your hands on all four sides until it's paper thin and covers a large area of the table cloth. Be careful not to tear the dough. FILLING: 3 1/2 lbs. apples (peeled and coarsely chopped) 3/4 c. sugar 3/4 c. regular bread crumbs 1/2 stick butter, melted Cinnamon, lemon rind Optional: 2 oz. grated hazelnuts and (or) raisins, as many as you like Mix all ingredients in large bowl. After dough is rolled and pulled out, sprinkle with melted butter, then bread crumbs and finally apple mixture. Roll dough up quickly. Put dough on a buttered cookie sheet. Bake 45 minutes at medium heat. Brush melted butter on top. Serve hot or cold, with or without whipped cream or powdered sugar. |
