HEART HEALTHY FISH CHOWDER 
1 onion, diced
2 carrots, diced
2 tbsp. butter
3 c. water
2 lbs. cod, haddock or "chowder fish"
1/2 tsp. salt
1/4 tsp. pepper
2 potatoes, peeled & diced
12 oz. (1 can) evaporated skim milk

Saute onions and carrots in butter. In same pot add water, fish, salt, pepper and cook 15 minutes. Add potatoes. When potatoes are done, add milk and cook 15 minutes more. 4 to 6 servings.
