CUBAN FLAN 
1/2 c. granulated sugar
3 eggs
1 (8 oz.) pkg. cream cheese, softened
1 lg. can evaporated milk
1 can condensed milk
1 tsp. vanilla

SLOWLY heat granulated sugar over low heat, until it becomes caramelized, stirring constantly. It will become a light brown liquid. (Will burn easily if not stirred and heated slowly.) Immediately pour into a large, preferably round casserole dish. Will harden almost immediately.

Blend all remaining ingredients, mixing thoroughly. Pour into casserole dish over the caramelized sugar.

Bake at 350 degrees in a water bath for 60 to 90 minutes. (Place casserole dish in a large pan filled with water to bake.) Will have a custard-like appearance when done.

Remove casserole dish from water bath. Cool. Place in refrigerator and cool completely (overnight is best). Loosen edges with a sharp knife and invert onto a large plate. Caramelized sugar will now be a thin liquid.
