OATMEAL CAKE | |
1 1/4 c. boiling water 1 c. rolled oats 1/2 c. butter 1 c. warmed honey 1 tsp. vanilla 2 eggs 1/4 c. yogurt 1 1/4 c. whole wheat pastry flour 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt TOPPING: 4 tbsp. butter 3 tbsp. warmed honey 2 tbsp. dry milk powder or 2 tbsp. half and half or yogurt 3/4 c. grated, unsweetened coconut 1/3 c. nutmeats, optional Pour boiling water over the rolled oats and let soak for 20 minutes. Mix butter, honey, vanilla, eggs and yogurt. Beat with a spoon or whisk until smooth and fluffy. Preheat oven to 350 degrees and grease a 9 inch pan. Add oatmeal to mixture. Combine flour, soda, cinnamon and salt. Add to batter. Pour into pan and bake in preheated oven for about 55 minutes. Remove cake from oven, turn on broiler, then mix topping, adding each ingredient as given. Spread over the hot cake, place under the broiler for about 5 minutes, until topping is bubbly brown. (Watch carefully so it does not burn.) This cake has a good flavor and sturdy texture. It is excellent for lunch boxes, and it freezes well. |
