ZUCCHINI COOKIES 
1 c. shortening
1 c. sugar
1 egg
1 c. grated zucchini
2 c. flour
2 tsp. baking powder
1 tsp. vanilla
1 tsp. almond extract

Cream shortening and sugar. Add egg and grated zucchini. Then add flour, baking powder, vanilla and almond extract. Bake at 350 degrees for 8 minutes.

FROSTING:

Juice & rind of 1 orange
1 tsp. butter
Powdered sugar to spreading consistency
